Features of Mirror Polished
-
1. Rust Resistance
The mirror polished surface of the blades becomes extremely smooth, making it difficult for dirt and moisture to adhere. This enhances their rust-resistant properties.
-
2. Aesthetics
The glossy mirror polished surface is beautiful to look at and creates a sense of luxury, especially when customers can see you processing fish over the counter. It is an attractive option for professional chefs who value food presentation and for those who are particular about the design of their kitchen.
-
3. Less prone to dirt adhesion
The mirror polished surface increases the smoothness of the blade, which reduces friction against the food, resulting in smoother cutting.
It is less likely to get dirty, and the knife itself can be kept clean. This is especially useful in environments where raw foods such as fish and meat are often handled.
Maintenance Methods for Mirror Polished Knives
Please be careful not to over-polish mirror polished knives as it may cause scratches. After use, lightly wash the knife with detergent using the soft side of a sponge. The surface of a mirror polished knife is very delicate, so dirt can be easily removed. Be cautious not to use the rough side or a coarse sponge for cleaning as it may scratch the mirror polished surface. After washing, thoroughly wipe off any moisture with a dry cloth to keep it clean.
The Origin of Craftsmanship
-
The power of sharpening and understanding the material is what brings a tool to life.
-
Sharpening isn’t simply about making a blade sharper. It’s about knowing the nature of the material and drawing out its true potential. A tool, left untouched, is just an object; but once the right care is applied, it comes to life. The power of sharpening is like breathing life into it. Shaping the blade to match the material’s qualities ensures it fits naturally in the user’s hand. At that moment, the tool’s true strength awakens. That’s why we repeatedly hone and then use it, again and again. This cycle of sharpening and use is what makes a tool truly come alive.
