Drying Cutting Boards

Like knives and stones, cutting boards, regardless of material, should not be stored in a moist place or left submerged in water. This is because mold and surface darkening can easily occur. After washing, be sure to drain the water well, wipe the entire surface with a dry cloth, and dry it in a well-ventilated indoor place where it can stand upright. To reduce the surface area that touches the wall or cooktop as much as possible and improve air circulation, we recommend using a stand specifically designed for cutting boards. Some people dry cutting boards by propping them up against a wall at an angle, but this is not an appropriate method, as the cutting board tends to warp.

This is not an appropriate method. Wooden boards are also susceptible to warping and cracking due to sudden changes in temperature, and should not be dried in the sun or exposed to direct air.
