Cleaning Cutting Boards

For cutting boards made of plastic, neutral detergent, bleach, and alcohol spray can be used. However, they are sensitive to heat, and should not be heated in boiling water or placed in a dishwasher.
As for wooden cutting boards, they are not that compatible with detergents. However, there is still a concern about hygiene if they are simply washed in water. An effective solution is to rub coarse salt or lemon sections into the surface and then rinse it off. This removes the sliminess and has an antibacterial effect. If a detergent is used, it is recommended to use a mild alkaline detergent with low surfactants and good foaming properties.
It is recommended to use a scrubbing brush rather than a sponge. This is because it is easier to remove dirt from the fine surface of the blade.
